Samber Recipe

Sambar is a popular South Indian dish made with lentils, vegetables, and spices. Here's a basic recipe:

Ingredients:

1 cup toor dal (split pigeon peas)

1 medium-sized onion, chopped

1 medium-sized tomato, chopped

1 large carrot, chopped

1 large potato, chopped

1 drumstick, chopped

1/2 cup pumpkin, chopped

1/2 teaspoon turmeric powder

2 tablespoons sambar powder

2 green chilies, slit lengthwise

Salt, to taste

2 tablespoons ghee or oil

1/2 teaspoon mustard seeds

1/2 teaspoon cumin seeds

1 sprig curry leaves

1/2 teaspoon asafoetida

Instructions:

Cook the toor dal in a pressure cooker with 4 cups of water and turmeric powder until soft.

In a large pan, heat ghee or oil and add the mustard seeds. Once they start to splutter, add cumin seeds, curry leaves, and asafoetida.

Add the chopped onions, green chilies, and tomato. Cook until the onions turn translucent.

Add the chopped vegetables and cook for 5-7 minutes, until they are slightly soft.

Add the sambar powder and mix well. Cook for a minute.

Add the cooked dal along with the cooking liquid to the pan and bring to a boil.

Add salt to taste and simmer for 10-15 minutes.

Serve hot with steamed rice.
