500g boneless chicken, cut into small pieces
2 medium onions, chopped
3 medium tomatoes, chopped
3 cloves of garlic, minced
1 inch piece of ginger, minced
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (or to taste)
2 tablespoons oil
Salt, to taste
Fresh cilantro for garnish (optional)
Instructions:
Heat the oil in a large pan over medium heat.
Add the chopped onions and fry until golden brown, about 5-7 minutes.
Add the minced garlic and ginger and continue to fry for another minute.
Add the chopped tomatoes and cook until they have broken down and formed a smooth mixture, about 5-7 minutes.
Add the chicken pieces and cook until they are no longer pink, about 5-7 minutes.
Add the cumin, coriander, garam masala, turmeric, red chili powder, and salt to the pan and stir well to combine.
Reduce the heat to low and let the mixture simmer until the chicken is fully cooked and the sauce has thickened, about 10-15 minutes.
Serve hot with rice or flatbread and garnish with fresh cilantro if desired.
