Kadhi recipe

Kadhi is a popular dish in Indian cuisine, made with a yogurt-based sauce and a mixture of spices. Here's a simple recipe for making kadhi:

Ingredients:

1 cup plain yogurt

1/4 cup gram flour (besan)

2 cups water

1 teaspoon salt

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder

1/2 teaspoon cumin seeds

1/2 teaspoon mustard seeds

2 dried red chilies

2 tablespoons oil

1 teaspoon sugar

1/2 teaspoon coriander powder

2 cups water

2 tablespoons ghee or oil

1/2 teaspoon cumin seeds

1/2 teaspoon mustard seeds

1/2 teaspoon fenugreek seeds

8-10 curry leaves

1 medium onion, chopped

1 medium tomato, chopped

1/2 teaspoon coriander powder

2 tablespoons chopped coriander leaves

Instructions:

In a mixing bowl, whisk together yogurt and gram flour until smooth.

In a saucepan, heat 2 cups of water over medium heat and add the yogurt mixture. Stir continuously to avoid lumps.

Add salt, turmeric powder, red chili powder, and sugar to the saucepan and mix well.

Let the mixture simmer for 10-15 minutes, stirring occasionally, until it thickens.

In a separate pan, heat oil over medium heat and add cumin seeds, mustard seeds, dried red chilies, and curry leaves.

Once the seeds start to crackle, add chopped onion and tomato and cook until they are soft and translucent.

Add coriander powder and chopped coriander leaves and mix well.

Pour the mixture into the saucepan with the kadhi and stir to combine.

Let the kadhi simmer for 5-7 minutes and then turn off the heat.

Serve hot with rice or roti.
