Amritsari Chole Masala is a popular North Indian dish made with chickpeas (chole) in a spicy tomato and onion-based sauce. Here's a simple recipe for making it:
Ingredients:
2 cups chickpeas (soaked overnight)
2 medium-sized onions, chopped
2 medium-sized tomatoes, chopped
2 green chilies, chopped
2 tsp ginger-garlic paste
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp dry mango powder (amchur)
1 tsp garam masala
1 tsp red chili powder
1 tsp turmeric powder
Salt to taste
2 tbsp oil
Fresh coriander leaves for garnish
Instructions:
Heat the oil in a large saucepan and add cumin seeds.
Once they start to crackle, add the chopped onions and green chilies and cook until the onions turn golden brown.
Add the ginger-garlic paste and cook for 2-3 minutes until the raw smell disappears.
Add the chopped tomatoes and cook until they become soft and mushy.
Add the coriander seeds, dry mango powder, garam masala, red chili powder, turmeric powder, and salt. Mix well.
Drain the soaked chickpeas and add them to the pan. Stir to combine all the ingredients.
Add enough water to cover the chickpeas and let it come to a boil.
Reduce the heat and let it simmer for 20-25 minutes, or until the chickpeas are cooked and the sauce has thickened.
Serve hot with bhature, naan, or rice, garnished with fresh coriander leaves.
