Kaju Masala Recipe
Here's a recipe for Kaju (Cashew) Masala, a popular Indian dish:
Ingredients:
1 cup raw cashews
1 large onion, chopped
2 medium-sized tomatoes, chopped
2-3 green chilies, slit
1 tbsp ginger-garlic paste
1 tsp cumin seeds
1 tsp coriander powder
1 tsp red chili powder
1/2 tsp garam masala
1/2 tsp turmeric powder
Salt to taste
2-3 tbsp oil
Coriander leaves for garnish
Instructions:
Soak the cashews in warm water for 30 minutes. Drain the water and set aside.
Heat oil in a pan and add cumin seeds. When the seeds start to splutter, add chopped onions and green chilies. Saute until the onions turn translucent.
Add ginger-garlic paste and saute for 2-3 minutes until the raw smell disappears.
Add chopped tomatoes, coriander powder, red chili powder, turmeric powder, garam masala, and salt. Mix well and cook until the tomatoes turn mushy.
Add the soaked cashews and mix well. Add some water and cover the pan with a lid. Let it simmer for 8-10 minutes until the cashews are cooked.
Once the cashews are cooked, garnish with coriander leaves and serve hot with rice or roti.
