Vegetable Korma  recipe 


Here's a simple Vegetable Korma recipe:


Ingredients:


2 cups mixed vegetables (carrots, potatoes, peas, cauliflower, etc.)

1 onion, chopped

2 cloves garlic, minced

1 tsp ginger, minced

1/2 cup tomato puree

1/2 cup coconut milk

1 tsp garam masala

1 tsp turmeric powder

1 tsp cumin powder

1 tsp coriander powder

1 tsp red chili powder

Salt, to taste

2 tbsp oil

Coriander leaves, for garnish

Instructions:


Heat oil in a pan and add the chopped onions. Saute until they turn golden brown.

Add the minced garlic and ginger, and saute for a minute.

Add the mixed vegetables and saute for a few minutes.

Add the tomato puree, coconut milk, and all the spices. Mix well.

Cover the pan and let the vegetables cook on medium-low heat for about 10-15 minutes or until they are tender.

Garnish with coriander leaves and serve hot with rice or roti.
