Samosa recipe
Ingredients:
2 cups all-purpose flour
1/4 cup vegetable oil
1/2 teaspoon salt
1/4 teaspoon ajwain (optional)
Water, as needed
2 medium-sized potatoes, boiled and mashed
1/2 cup green peas, boiled and mashed
1/2 teaspoon cumin seeds
1/2 teaspoon grated ginger
1/2 teaspoon garam masala
1/2 teaspoon coriander powder
1/2 teaspoon red chili powder
1/2 teaspoon amchur (dried mango) powder
Salt, to taste
Oil, for frying
Instructions:
In a mixing bowl, combine the flour, vegetable oil, salt, and ajwain (if using). Add water gradually and knead the dough until it is smooth and pliable. Cover the dough and set aside for 20 minutes.
In a separate bowl, mix together the mashed potatoes, mashed green peas, cumin seeds, grated ginger, garam masala, coriander powder, red chili powder, amchur powder, and salt.
Divide the dough into small balls and roll each one out into a thin circle. Cut each circle in half.
Take one half-circle and form a cone shape by overlapping the edges and sealing them with a little water. Fill the cone with the potato-pea mixture and seal the open edge in the same way.
Repeat with the remaining dough and filling.
Heat oil in a deep pan over medium heat. Add a few samosas at a time and fry until golden brown, turning occasionally.
Drain the samosas on a paper towel to remove excess oil.
Serve hot with chutney or sauce of your choice. Enjoy!
