Gulab Jamun recipe
Ingredients:
1 cup milk powder
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon cardamom powder
1/4 cup ghee or unsalted butter
1/3 cup whole milk
Oil for frying
For syrup:
1 cup sugar
1 cup water
1/4 teaspoon cardamom powder
1 teaspoon rose water (optional)
Instructions:
In a mixing bowl, combine milk powder, all-purpose flour, baking powder, and cardamom powder.
Add ghee or unsalted butter to the mixture and use your fingers to mix until the mixture resembles bread crumbs.
Gradually add milk to the mixture and knead until it forms a smooth dough. Do not over-knead the dough.
Divide the dough into small equal-sized balls and roll them into smooth balls.
Heat oil in a deep frying pan on medium-low heat. Once hot, reduce the heat to low and add the balls to the oil. Fry the balls until they are golden brown in color, stirring occasionally.
Remove the balls with a slotted spoon and place them on a paper towel to remove any excess oil.
To make the syrup, combine sugar and water in a saucepan and bring to a boil. Reduce the heat and add cardamom powder and rose water (if using). Simmer the syrup for 5-7 minutes until it thickens.
Add the fried balls to the syrup and let them soak for at least 30 minutes before serving. Garnish with chopped pistachios or almonds, if desired.
