Chicken Handi Recipe
Ingredients:
500g boneless chicken, cut into bite-sized pieces
1 onion, chopped
2 tomatoes, chopped
1 teaspoon ginger paste
1 teaspoon garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
1/2 cup plain yogurt
1/4 cup heavy cream
2 tablespoons oil
Fresh coriander leaves for garnish
Instructions:
Heat oil in a large pot or kadhai over medium heat.
Add cumin seeds and let them crackle.
Add chopped onions and fry until golden brown.
Add ginger and garlic paste, fry for a minute.
Add chopped tomatoes, cook until they are soft and mushy.
Add chicken pieces, turmeric, coriander, red chili powder and salt.
Stir well to mix all the spices with chicken.
Cook for 10-12 minutes or until chicken is cooked through.
Stir in yogurt and cream, cook for another 2-3 minutes.
Serve hot with rice or roti, garnished with fresh coriander leaves.
