Malvani masala Recipe
Malvani masala is a spice blend from the Malvan region of Maharashtra, India. Here is a simple recipe to make it at home:
Ingredients:
15 dried Kashmiri red chilies
10 black peppercorns
10 cloves
5 cinnamon sticks (2 inches each)
2 tsp coriander seeds
2 tsp cumin seeds
2 tsp fennel seeds
2 tsp fenugreek seeds
1 tsp turmeric powder
1 tsp dry coconut (optional)
2-3 star anise (optional)
Salt, to taste
Instructions:
Dry roast all the whole spices (chilies, peppercorns, cloves, cinnamon, coriander seeds, cumin seeds, fennel seeds, fenugreek seeds, and star anise) in a pan until fragrant.
Remove from heat and let it cool completely.
Grind the roasted spices, turmeric powder, and dry coconut in a spice grinder to a fine powder.
Store in an airtight container and use as needed.
Note: You can adjust the quantities of the spices as per your taste preference. The masala can be stored for up to 6 months.
