Anda Bhurji recipe
Anda Bhurji is a popular Indian dish made with scrambled eggs. Here's a simple recipe:
Ingredients:
4 eggs
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 green chili, finely chopped (optional)
1/4 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt to taste
2 tablespoons oil or ghee
1/4 cup cilantro leaves, chopped
Instructions:
In a bowl, whisk the eggs, turmeric powder, red chili powder, and salt.
In a pan, heat the oil or ghee over medium heat. Add the onions, tomatoes, and green chili (if using), and cook until the onions are soft and translucent.
Pour in the egg mixture and scramble until fully cooked.
Stir in the cilantro leaves and serve hot with bread, roti, or rice.
